It’s easy to walk past a pizza joint in New York. After all, they’re on every corner, right? But then there’s Louie & Ernie’s Pizza—a place that defies the ordinary, quietly holding its ground since 1947. They’ve moved once, changed hands once, but what hasn’t changed is the reason why this place still matters.

Let’s talk about calzones. Not just any calzones, but the Cheese Calzone that’s simple, unassuming, and perfect. The Broccoli Rabe Calzone? It’s a little rebellious, with that bitterness cutting through the creamy cheese like a well-placed jab. Both wrapped in that same dough, crisp on the outside, soft on the inside, designed to make you feel something. This isn’t fast food. It’s slow, thoughtful, and deliberate.

The Story Behind the Story

Here’s the thing: Louie & Ernie’s is about more than just food. It’s about roots. It’s about two brothers who opened their doors over 70 years ago, moved across the city, and left a legacy behind. That’s right—this isn’t just a pizza place. It’s a time machine, a moment frozen in dough and mozzarella, carried forward by cousins Cosimo and Johnny Tiso, who’ve kept the fire burning.

In a world that’s obsessed with the next big thing, this place doesn’t care. They’re still using fresh ingredients, still baking their own dough, and still perfecting the art of the classic New York slice. Because the truth is, they know something a lot of other places have forgotten: consistency is the secret weapon.

Why You Need to Try Louie & Ernie’s

You’ve probably heard it before: New York has the best pizza. But here’s the question—how often do we stop to think about why? What makes one pizza better than another? At Louie & Ernie’s, it’s simple. There’s no magic trick. It’s quality ingredients, craftsmanship, and history.

It’s the kind of place that doesn’t change just because the world does. It doesn’t need to. Because when you’re good, you don’t have to shout about it. Louie & Ernie’s has been doing the same thing for decades, and that’s why people come back. Time and time again.

It’s not just about eating pizza here. It’s about understanding why pizza like this matters. Why, even in a world full of options, Louie & Ernie’s is still on every “Best Pizza” list. You don’t go here for the atmosphere. You go because it’s what pizza should be: honest, straightforward, and done right.

Ingredients

  • Dough Ingredients
  • 3 cups all-purpose flour or bread flour

  • 1 1/2 tsp salt

  • 1 tsp quick-rise yeast

  • 1 tbsp extra virgin olive oil

  • 1 1/4 cups lukewarm water

  • Filling Ingredients
  • 1 tbsp olive oil

  • 1 bunch broccoli rabe roughly chopped

  • 4 cloves garlic minced finely

  • 1/2 to 1 tsp red pepper flakes

  • 2 anchovy fillets finely chopped (optional)

  • Salt and freshly ground black pepper to taste

  • 2 cups shredded mozzarella cheese

  • Alternative Ingredients:
  • All-purpose flour can be replaced with whole wheat flour for a healthier option.

  • Broccoli rabe can be substituted with spinach or kale.

  • Mozzarella cheese can be swapped with provolone or cheddar.

  • Anchovies can be omitted for a vegetarian version.

Directions

  • Dough Preparation – In a large mixing bowl, combine the flour and salt. Dissolve the yeast in lukewarm water and add it to the flour mixture along with olive oil. Knead until smooth and elastic for about 10 minutes. Let it rest in a warm place for an hour until doubled in size.
  • Filling Preparation – Heat olive oil in a skillet over medium heat. Sauté the minced garlic until fragrant, about 1 minute. Add the chopped broccoli rabe and cook until tender, around 5 minutes. Stir in red pepper flakes and anchovies if using. Season with salt and pepper.Cheesy Broccoli Rabe Pockets_post
  • Assembling Calzones – Preheat your oven to 425°F (220°C). Divide the dough into four equal parts and roll each into a circle on a floured surface. Spread the broccoli rabe mixture on one half of each circle and top with mozzarella cheese.Cheesy Broccoli Rabe Pockets_post2
  • Baking Calzones – Fold the dough over the filling to form a semi-circle and seal the edges by pressing with a fork. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
  • Serving Suggestions – Allow calzones to cool slightly before serving. Pair with marinara sauce for dipping if desired.
