Portland’s culinary scene has always been a treasure trove of diverse flavors and innovative dining experiences, but Fallow’s Rest Wild takes it to another level, offering an experience that transcends mere dining. Nestled in the heart of Portland, this hidden gem is more than just a restaurant—it’s an expedition into the wild, both in flavor and atmosphere.

The Atmosphere

Walking into Fallow’s Rest Wild, I felt as if I had been transported into a rustic retreat deep in the woods, far from the bustling city streets. The décor is a harmonious blend of raw, natural elements—wooden beams, stone walls, and ambient lighting create an intimate setting that is at once cozy and adventurous. Every corner of the restaurant is meticulously curated to evoke a sense of wilderness, with lush greenery and earthy tones that make you feel like you’ve stepped into a secluded forest lodge.

As I settled into my seat, the warm, earthy tones of the interior wrapped around me like a soft blanket, providing a comforting contrast to the crisp, cool air outside. The low hum of conversations mixed with the crackle of a nearby fireplace, creating a symphony of sounds that immediately put me at ease. It was the perfect setting to embark on a culinary adventure.

The Menu: A Forager’s Dream

The menu at Fallow’s Rest Wild is a tribute to the bounty of the Pacific Northwest. Each dish is thoughtfully crafted to highlight local, seasonal ingredients, many of which are foraged from the surrounding wilderness. It’s a celebration of nature’s abundance, presented in a way that is both refined and deeply rooted in the earth.

To start, I was served the Five Spice Roasted Mushrooms with Ginger Coconut Yogurt, Shishito Pepper, and Pickled Blueberry. This dish was an unexpected revelation, blending the earthy depth of mushrooms with the vibrant, tangy notes of pickled blueberries and the creamy, spiced richness of the ginger coconut yogurt. The shishito peppers added a delightful hint of heat, creating a harmonious balance of flavors that danced on the palate. It was a dish that truly embodied the spirit of the wild, with each ingredient telling its own story.

For the main course, I was treated to the Carmen Ranch Grass Fed & Finished Gazpacho Tasting. This dish was a masterclass in freshness and simplicity, featuring a beautifully composed gazpacho that highlighted the purity and quality of the locally sourced ingredients. The grass-fed beef from Carmen Ranch was tender and flavorful, providing a hearty contrast to the light, crisp vegetables in the gazpacho. Each spoonful was a refreshing burst of flavor, a reminder of the land’s bounty and the meticulous care that goes into sourcing each ingredient.

The staff at Fallow’s Rest Wild are true guides in this culinary journey. Knowledgeable and passionate, they eagerly share the stories behind each dish, from the sourcing of ingredients to the inspiration behind the recipes. Their enthusiasm is contagious, making the dining experience even more immersive and enjoyable.

Ingredients

  • For the Stir-fry

  • 2 tablespoons olive oil (extra virgin)

  • 1 tablespoon butter (unsalted)

  • 1 pound baby bella mushrooms (quartered)

  • 1 tablespoon mirin (or rice wine)

  • 1 teaspoon hoisin sauce (or oyster sauce)

  • 1 teaspoon tamari (or soy sauce)

  • 1/2 teaspoon five-spice powder (Chinese)

  • pinch ground white pepper

  • kosher salt (to taste)

  • For Serving

  • 3 green onions (chopped)

  • toasted sesame oil (for drizzling)

  • steamed rice (for serving)

  • Alternative Ingredients:
  • Olive oil can be replaced with avocado oil.

  • Butter can be substituted with ghee or a plant-based butter for a vegan option.

  • Baby bella mushrooms can be swapped with shiitake or button mushrooms.

  • Mirin can be replaced with dry sherry or white wine.

  • Hoisin sauce can be used instead of oyster sauce for a vegetarian option.

  • Tamari can be used in place of soy sauce for a gluten-free option.

Directions

  • Heat the olive oil and butter in a large nonstick pan over high heat until the butter melts and starts to bubble. Add the quartered mushrooms in batches to avoid overcrowding the pan. Stir continuously for about 5-7 minutes until the mushrooms are golden brown.
  • Once all the mushrooms are browned, return them to the pan. Pour in the mirin to deglaze the pan, scraping up any browned bits from the bottom. Let it cook down quickly for about 1-2 minutes.
  • Stir in the hoisin sauce, tamari, and five-spice powder until well combined. Season with a pinch of white pepper and kosher salt to taste.
  • Sprinkle the chopped green onions over the top of the stir-fry. Serve immediately over steamed rice and drizzle with toasted sesame oil.
