  • 1 cup dry white wine

  • 1/4 cup low-sodium chicken broth

Sear for about 4-5 minutes until the skin achieves a crispy, golden-brown texture. Carefully flip the fillets and cook the flesh side for an additional 2-3 minutes. Remove the fish from the skillet and let it rest on a plate.
  • Prepare the Tomato Mixture – In the same skillet, add N/A and reduce the heat to medium. Introduce the thinly sliced shallot and cook until translucent, around 2 minutes. Add the minced garlic and sauté for another minute until fragrant. Pour in the white wine, scraping any browned bits from the bottom of the pan, and let it reduce by half, approximately 5 minutes.
