Tucked away in the bustling streets of San Gabriel in Los Angeles, Chengdu Taste is a mecca for Sichuan cuisine lovers, where bold flavors, aromatic spices, and fiery heat combine to create an unforgettable dining experience. My visit there was nothing short of extraordinary, as I indulged in their famous Noodle & Wonton Rice dish, a culinary treasure that showcased the very essence of Sichuan cooking.

A Warm Welcome to Sichuan’s World

Walking into Chengdu Taste felt like stepping into a vibrant, flavor-packed corner of Chengdu itself. The walls were adorned with subtle nods to Chinese art and culture, and the tantalizing aroma of chilies and spices filled the air. The restaurant buzzed with a mix of chatter, laughter, and the clink of chopsticks against bowls—a true testament to its popularity and authenticity.

Noodle & Wonton Rice: A Star on the Menu

I couldn’t resist ordering their Noodle & Wonton Rice, a dish that came highly recommended by friends and reviews alike. When it arrived, the presentation alone was enough to make my mouth water. A steaming bowl of silky noodles sat nestled beneath tender wontons, all swimming in a crimson broth flecked with chili oil and Sichuan peppercorns.

The first bite was a revelation. The noodles were perfectly al dente, providing a satisfying chew that absorbed the flavorful broth beautifully. The wontons were delicate yet hearty, stuffed with a savory filling that balanced the heat of the spices. The broth was the real star, though—its layered complexity unfolded with every sip. It was spicy, yes, but not overwhelmingly so. Instead, it delivered a tingling sensation thanks to the Sichuan peppercorns, which left my palate tingling in delight.

An Explosion of Flavors

What struck me most about this dish was its balance. Despite the boldness of the spices, each element complemented the other seamlessly. The chili oil added warmth and depth, while the peppercorns brought a unique numbing heat. Fresh scallions and cilantro garnished the bowl, offering a refreshing contrast to the richness of the broth.

As I continued eating, I found myself savoring each bite, marveling at how the dish managed to be both comforting and exhilarating. It was a bowl of harmony—a perfect representation of Sichuan cuisine’s ability to marry contrasting flavors and textures.

Beyond the Bowl

While the Noodle & Wonton Rice was the highlight of my meal, the entire experience at Chengdu Taste was worth celebrating. The staff were attentive and eager to guide newcomers through the menu, ensuring every diner could navigate the bold, spicy offerings with confidence.

A Place Worth Returning To

Chengdu Taste left a lasting impression on me. It wasn’t just about the food—it was about being transported to a different world through flavors that told a story of tradition and culture. Whether you’re a spice enthusiast or someone looking to explore the depth of Sichuan cuisine, this spot is a must-visit.

As I stepped out of the restaurant, the tingling warmth of the spices lingered on my lips, a reminder of the memorable meal I had just enjoyed. Chengdu Taste is more than just a restaurant—it’s a gateway to the heart of Sichuan, and I can’t wait to return for another flavorful adventure.

Ingredients

  • Noodles
  • 300 g rice vermicelli

  • Wontons
  • 300 g fresh shrimp finely minced

  • 200 g ground pork

  • 2 tbsp premium oyster sauce

  • 2 tsp toasted sesame oil

  • Wonton wrappers as needed

  • white pepper a dash

  • Mushroom Sauce
  • 2 tbsp sunflower oil

  • 2 cloves garlic finely chopped

  • 6 dried shiitake mushrooms rehydrated and thinly sliced, reserve soaking water

  • 2 tbsp oyster sauce

  • 2 tbsp dark soy sauce

  • 300 ml water

  • 1 medium carrot peeled and finely diced

  • Garnish
  • 2 green onions thinly sliced

  • Alternative Ingredients:
  • Prawns: Substitute with diced chicken or tofu for a different protein source.

  • Pork: Use ground turkey or omit for a vegetarian version.

  • Soy Sauce: Replace with tamari for a gluten-free option.

  • Sunflower Oil: Can be swapped with vegetable or canola oil.

  • Wonton Wrappers: Use gluten-free wrappers or thin slices of cabbage as an alternative.

  • Rice Vermicelli: Shirataki noodles or zucchini noodles can be used for a low-carb alternative.

Directions

  • Prepare Noodles: Begin by soaking the rice vermicelli in warm water for approximately 25 minutes until they’re pliable and tender.Wonton Rice Noodle Bowl with Mushroom Gravy_post1
  • Make Wontons: In a large mixing bowl, combine the minced shrimp, ground pork, oyster sauce, sesame oil, and a sprinkle of white pepper. Lay out a wonton wrapper with one point facing towards you, place about 1-2 teaspoons of the filling in the center, fold into a triangle, and press the edges firmly to seal. Repeat until all filling is used. Set aside on a clean surface.
  • Cook Mushroom Sauce: Heat sunflower oil in a nonstick pan over medium-high heat. Add the chopped garlic and sauté for about 1 minute until fragrant. Introduce the sliced shiitake mushrooms and stir-fry for 3 minutes. Pour in the oyster sauce, dark soy sauce, and reserved mushroom soaking water, bringing the mixture to a boil. Add the chopped carrots, stirring continuously, and let it simmer for an additional 3 minutes to allow flavors to meld.
  • Boil Wontons: Meanwhile, bring a large pot of water to a rolling boil. Gently add the prepared wontons and cook for 4 minutes until they float to the surface, indicating they’re done. Drain the wontons using a colander and set aside.Wonton Rice Noodle Bowl with Mushroom Gravy_post2
  • Assemble Dish: Reheat the soaked rice vermicelli as needed. Divide the noodles evenly among four serving plates. Generously ladle the mushroom sauce over each portion, then top with equal amounts of cooked wontons.
  • Garnish and Serve: Sprinkle the finely sliced green onions over the top for a fresh, vibrant finish. Serve the noodle bowls warm, allowing the rich flavors to come together in every bite.Wonton Rice Noodle Bowl with Mushroom Gravy_done1
