  • 2 teaspoons whole black peppercorns

  • 2 teaspoons sea salt

  • 2 corks optional, for added flavor

  • Alternative Ingredients:
  • Octopus: Substitute with squid or calamari for a similar texture and flavor.

  • Lemons: Can be replaced with lime juice for a different citrus twist.

  • Bay Leaves: Use rosemary or thyme if bay leaves are unavailable.

  • Peppercorns: Ground black pepper can be used instead of whole peppercorns.

  • Salt: Any sea salt or kosher salt can be used as alternatives.

  • Cork: If cork is unavailable or to omit leave it out or use a small piece of food-safe wood chip for smoky flavor.

  • Extra Virgin Olive Oil: Avocado oil or grapeseed oil can be used as alternatives.

Directions

  • Preparing the Octopus – Begin by thoroughly rinsing 2 pounds of baby octopus under cold water. Carefully remove the beak and eyes, or request your fishmonger to handle this during purchase to ensure cleanliness.   • Simmering Process – In a large dutch oven, bring enough water to a boil to fully submerge the octopus. Add the juice of 2 lemons, 4 bay leaves, 2 teaspoons of whole black peppercorns, 2 teaspoons of sea salt, and 2 corks if desired. Lower the heat to a gentle simmer, and slowly dip the octopus into the water a few times before fully submerging to encourage the legs to curl and cook evenly.   • Cooling and Skin Removal – After simmering, carefully remove the octopus from the pot and allow it to cool. The skin should turn a dark purple and should peel off easily when touched, indicating thorough cooking. While optional, removing the skin gives a cleaner surface for grilling. You can rinse the octopus under warm water or gently pat it dry with a paper towel.
  • Marinating the Octopus – Separate the body from the legs by slicing through the center. Once separated, toss the octopus with 4 tablespoons of premium extra virgin olive oil, additional salt, and pepper to taste. For enhanced flavor, you may choose to marinate the octopus for several hours in the refrigerator, although it can also be grilled immediately.
  • Grilling to Perfection – Preheat your grill pan or cast iron skillet over medium-high heat. Place the marinated octopus onto the hot surface and sear each side for about 3 minutes until charred and crispy. Since the octopus is already cooked, this step is merely to add texture and smoky flavor.
